INGREDIENTS
  • 1/3 c. butter
  • 4 eggs
  • 1 c. milk
  • 1 c. flour
  • Nutmeg
  • Powdered sugar
INSTRUCTIONS
Put 1/3 cup butter into 3-4 quart pan and set in oven to melt. Prepare batter: whirl in blender 60 seconds: 4 eggs. Slowly add 1 cup milk and 1 cup flour. Continue blending at high speed for 30 seconds. Remove pan from oven and pour batter into hot melted butter. Return to oven and bake until puffy and well browned (20-25 minutes). Dust with nutmeg and powdered sugar.

For German pancakes bake 15 minutes, remove and sprinkle with fresh apple slices. Return to oven. Dust with cinnamon and powdered sugar. The Ducth baby pancake is ready to serve with butter and lemon slices.

  • 1/2 c. butter
  • 5 eggs
  • 1 1/4 c. milk & flour (each)

FOR 4 1/2 TO 5 QUART PAN:
  • 1/2 c. butter
  • 6 eggs
  • 1 1/2 c. milk & flour (each)
Dutch Baby Pancake INSTRUCTIONS
Large round pan with sides about 3 inches deep (can build up side with aluminum foil.

Preheat oven to 450 degrees. Melt butter in pan in oven. Put eggs in blender and mix on "high" for 1 minute. Continue to run blender while adding milk. Continue to run blender while slowly adding flour. Blend for 30 seconds after flour is added.

Remove pan from oven, add batter and return to oven until pancake is high, brown and puffy (20 to 25 minutes). Top with fresh, frozen or canned fruit, syrup, confectioners' sugar, cinnamon, nutmeg... use your imagination! The Dutch Baby Pancake recipe is ready..enjoy the baby pancake ! Nice !

Put butter in large pan (Dutch oven) in hot (425 degree F) oven to melt. Meanwhile, beat eggs, then beat in flour and milk. Pour mixture into melted butter. Cook 20-25 minutes or until batter has risen up sides of pan and is golden brown. Cut in wedges and serve with confectioners sugar or preserves. DUTCH BABY PANCAKE RECIPE

INGREDIENTS
  • 1 tbsp. sugar (opt.)
  • 3/4 c. milk
  • 3/4 c. flour
  • 1/4 tsp. salt
  • 1 tsp. vanilla
INSTRUCTIONS
Put a cast-iron frying pan in the oven and preheat the oven to 400 degrees. Put all the ingredients into a blender and blend at high speed until everything is thoroughly mixed into a smooth batter. Scrape the sides of the blender container to be sure all the flour is blended in the batter.

When the frying pan is hot, melt about a tablespoon of butter in pan. Pour the batter into the pan and bake for 20 to 22 minutes. You can cut the pancake into wedges, or you can leave it whole. Traditionally, you serve these with lemon and powdered sugar. At our house, we like them with strawberries that we froze in the spring. The Dutch baby pancake recipe is ready to serve...enjoy !

CHILI DUTCH BABY

INSTRUCTIONS
  • Homemade or purchased chili fills this version of a puffy oven pancake.
  • 5 lg. eggs 1/2 c.
  • yellow cornmeal 3/4 c.
  • all purpose flour 1 1/4 c.
  • milk 4 2/3 c.
  • thick homemade or purchased (40 oz. can) chili with beans 1 c.
  • (4 oz.) shredded Jack cheese
  • 4 green onions, ends trimmed, sliced
  • 1 (4 oz.) can diced green chilies
  • 1 med. size firm ripe avocado, peeled, pitted & sliced
  • Purchased green salsa

INSTRUCTIONS
Place butter in a 10" to 12" cast iron or other oven proof frying pan. Heat in a 425 degree oven until butter melts, about 5 minutes. Remove from oven.

Meanwhile, in a large bowl, whisk eggs, cornmeal, flour and milk until smooth. Pour batter into hot pan. Spoon chili into center of batter, leaving a 1 1/2" margin around chili. Bake until pancake is well browned, about 30 minutes, Skim and discard fat from top of chili.

Cut pancake in wedges, offer cheese, green onions, chilies, avocado and salsa to add to taste. The Dutch baby pancake recipe is ready to serve 6 persons...Enjoy it !
