CHILI DUTCH BABY

CHILI DUTCH BABY
INSTRUCTIONS
  • Homemade or purchased chili fills this version of a puffy oven pancake.
  • 5 lg. eggs 1/2 c.
  • yellow cornmeal 3/4 c.
  • all purpose flour 1 1/4 c.
  • milk 4 2/3 c.
  • thick homemade or purchased (40 oz. can) chili with beans 1 c.
  • (4 oz.) shredded Jack cheese
  • 4 green onions, ends trimmed, sliced
  • 1 (4 oz.) can diced green chilies
  • 1 med. size firm ripe avocado, peeled, pitted & sliced
  • Purchased green salsa

INSTRUCTIONS
Place butter in a 10" to 12" cast iron or other oven proof frying pan. Heat in a 425 degree oven until butter melts, about 5 minutes. Remove from oven.

Meanwhile, in a large bowl, whisk eggs, cornmeal, flour and milk until smooth. Pour batter into hot pan. Spoon chili into center of batter, leaving a 1 1/2" margin around chili. Bake until pancake is well browned, about 30 minutes, Skim and discard fat from top of chili.

Cut pancake in wedges, offer cheese, green onions, chilies, avocado and salsa to add to taste. The Dutch baby pancake recipe is ready to serve 6 persons...Enjoy it !

  • 1/4 c. butter
  • 3 eggs
  • 3/4 c. milk
  • 3/4 c. flour
Serves 3

3-4 Quart Pan:
  • 1/3 c. butter
  • 4 eggs
  • 1 c. milk
  • 1 c. flour
Serves 4

4-4 1/2 Quart Pan:
  • 1/2 c. butter
  • 5 eggs
  • 1 1/4 c. milk
  • 1 1/4 c. flour
Serves 5

4 1/2-5 Quart Pan:
  • 1/2 c. butter
  • 6 eggs
  • 1 1/2 c. milk
  • 1 1/2 c. flour
Serves 6

INSTRUCTIONS
Put butter in shallow pan and set into 425 degree oven. Mix batter quickly while butter melts. Put eggs in blender; whirl at high speed 1 minute. With motor running, gradually add milk, then flour; blend 30 seconds. Remove pan from oven; pour in batter. Bake 20-25 minutes
at 425 degrees. Dust with nutmeg; serve with fruit, powdered sugar, syrup, or canned pie filling.

  • 3 eggs
  • 1/2 c. flour

  • Lemon juice
  • Powdered sugar

INSTRUCTIONS
In bowl, beat eggs with wire whip until blended. Add flour to eggs in 4 additions, beating after each until smooth. Add milk in 2 additions beating slightly. Lightly beat in 2 tablespoons melted
butter and salt. Thickly butter two 9 inch pie pans. Pour in batter.
Bake in hot oven 400 degrees for 10 minutes. Reduce heat to 350 degrees and bake 5 more minutes. Serve with syrup, lemon juice or wedges and powdered sugar on top. The Dutch baby pancake recipe is ready to serve....Nice !

  • 3 eggs
  • 1/2 c. milk
  • 1/2 c. flour
  • Dash of salt

In a large bowl, beat the eggs. Add the milk and beat well. Stir together flour and salt. Put into sifter and sift into egg mixture, whisking constantly until completely smooth. Add 2 tablespoons
melted butter. Pour batter into buttered, deep 10 inch skillet. Bake at 450 degrees for 15 minutes. Reduce oven heat to 350 degrees and bake an additional 10 to 15 minutes. Cut into quarters..and the Dutch baby pancake is ready to serve...Enjoy it !

A Dutch Baby Pancake Recipe

Ingredients:
  • 1/2 cup all purpose flour
  • 2 tablespoons sugar
  • 1/4 teaspoons salt
  • 2 eggs
  • 1 teaspoon vegetable or canola oil
  • 1/2 cup milk
  • 1/4 teaspoons cinnamon
  • 1/8 teaspoons nutmeg
  • 1 teaspoon vanilla extract
  • 2 teaspoons butter

Instructions:
Pre-heat oven to 425°F.
Mix dry ingredients together, set aside. Whisk remaining ingredients together. Gradually beat dry ingredients into egg mixture until smooth.

Wrap handle of a medium non-stick skillet with foil. Melt butter in skillet and coat evenly. Pour batter into skillet and bake for 20 minutes. Reduce heat to 350°F and bake for an additional 3-5 minutes or until puffed and golden brown. Carefully remove pancake from skillet, cut in half, sprinkle with lemon and confectioner's sugar if desired and the Dutch baby pancake recipe is ready to serve....great !

INGREDIENTS
  • 1/3 cup butter
  • 1 cup milk
  • 1 cup all-purpose flour
  • 4 large eggs
  • Maple syrup for accompaniment

INSTRUCTIONS
1. Place butter in a baking pan and set in a 425*F (220^C) oven to melt butter.
2. Pour milk in a bowl and add flour slowly to milk. In another bowl, beat eggs until light and lemon-colored; add to the batter.
3. Remove the pan from the oven and pour the batter into the melted butter. Return pan to oven and bake 20 to 25 minutes, or until puffy.
4. Serve with maple syrup. The Dutch baby pancake recipe makes 4 servings....delicious !
